Take-a-break Coffee Cake: A Healthy Recipe for New Moms

Give yourself a time-out and enjoy a slice of this nutrient-rich coffee cake recipe, created especially for new moms and made with fresh berries and pecans. White whole-wheat flour provides 100 percent whole-grain goodness to help with weight maintenance. Fresh berries supply vitamins A, C and K to protect cells and boost immunity, and they also supply the eye-loving antioxidant lutein. Even the pecans pack a punch of antioxidants and good fats to promote heart health. A simple lemon glaze on this filling coffee cake provides just the right amount of sweet-tart flavor.

Makes 8 servings

Ingredients
Coffee Cake
1 cup white whole-wheat flour
1/2 cup all-purpose flour
3/4 cup and 1 tablespoon sugar, divided
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 cup finely chopped pecans
1/2 cup buttermilk
1 large egg
1/4 cup canola oil
1/2 teaspoon lemon juice
1/2 teaspoon vanilla extract
1 3/4 cup total mixed berries (3/4 cup blueberries, 1/2 cup each raspberries and blackberries)

Lemon Glaze
1/3 cup powdered sugar
1/2 to 1 teaspoon lemon juice
1 to 2 teaspoons milk

Directions

1.    Heat oven to 350 F. Grease and flour (or use vegetable cooking spray with flour) the bottom and sides of a 9-inch round cake pan.

2.    In a large bowl, whisk together flours, 3/4 cup sugar, baking powder, baking soda, salt and cinnamon. Stir in chopped pecans. Set aside.

3.    In a medium bowl, toss remaining 1 tablespoon sugar with berries and set aside.

4.    In another medium bowl, whisk together buttermilk, egg, canola oil, lemon juice and vanilla until blended.

5.    Lightly stir liquid mixture into flour mixture, stirring just until moistened. Avoid over-mixing.

6.    Gently fold in half of the berries. Spread or spoon batter into prepared pan. Top with remaining berries.

7.    Bake for 35-45 minutes or until a toothpick inserted in center of cake comes out clean. Let cool on wire rack for about 30 minutes before glazing.

8.    Mix glaze ingredients together in a small bowl until smooth and thin enough to drizzle. Drizzle over warm coffee cake.
